  1. Yes, this is my style of cooking too. Prep the ingredients and cook them during the week. I like fresh meals and don’t do meal prep, especially for the week, it goes bad unless frozen. Freshly cooked meals are healthier, tastier abd more enjoyable. Cooking only takes 30 mins!

  2. I prep my celery, carrots, broccoli, cauliflower, radishes, sweet potatoes – those seem to turn the most in the fridge bins. I wash, dice or chop and ziploc bag it. I stick it in the freezer after labeling and then when I cook I just pull out a bag or more than one of whatever I need. We picked up at Sams Club today so tomorrow I’ll wash & chop my large bag of celery sticks and red peppers. Today I did that to 2 sweet potatoes, the old celery from the fridge, 2 large onions, the rest of the radishes put it all in a big bowl and added some EVOO and then Garlic, Tarragon, Thyme, Rosemary, Mint and Salt & Pepper mixed it all well and then poured it on my large baking pan lined with parchment and roasted that whole thing at 375* for almost an hour. Came out perfectly and got 3 small rectangle pyrex containers so we got 3 sides to go with meals out of that and none of it ended up in the trash can.
